1 kg pork leg
1 Onion, chunky style
3 Bay leaves
3 Allspice berries
500 g Ripe roma tomatoes
500 g Tomatillo, no husks
8 Garlic cloves, peeled
4 Guajillo peppers
2 Ancho peppers
1-2 Chilis de arbol
Salt
Cook meat in water with onion, bay, allspice, and salt until very soft
Remove meat from cooking liquid
Cook tomatoes and tomatillos in the same liquid for about 15 minutes
Turn off heat and add peppers to soften in the hot liquid
Blend peppers with onion and garlic
Add meat and cook for 30 minutes
Remove from heat and let cool
Pull apart meat with fork for tamal filling
